Wholegrain Penne and Rabe in Creamy Garlic Sauce.
I found some Broccoli Rabe at Woolies the other day. Never having seen it before but thinking how yummy it looked (because in case you haven't noticed, I LOVE my leafy greens) so I snaffled some up and brought it home. But OH! What do you make with something you've never seen before let alone cooked. But I figured something out ;)
By dinner time however I didn't really feel like a creamy sauce but one bite of this and my mind was changed. I went back for seconds!
200g San Remo Wholegrain Penne Pasta
170g Broccoli Rabe, washed and cut into bite sized pieces, stems, leaves, florets and all
Béchamel Sauce
1/8 Cup Margarine
1/8 Cup Flour
1 1/3 Cups Rice Milk (I used a combination of Rice and Oat cause I had 2 open)
1 Clove of Garlic, Finely Minced
2 Tbsp Nutritional Yeast Flakes
1 Squirt Lemon Juice (bottled is fine)
1 Squeeze (small) of Mild American Mustard
Salt and pepper to taste
Bring a big pot filled with water to a boil. Add pasta, return to boil and cook according to packet directions.
Meanwhile make your Garlicky Béchamel by putting the Margarine in a saucepan over medium heat with the garlic. When the margarine has melted simmer the garlic for a couple of minutes but don't burn it then add the flour and mix well for a minute or so. Slowly add the milk, stirring constantly with a whisk to prevent lumps. You can add more milk if you find the sauce too thick. Add the salt, pepper and savoury yeast and let simmer on low heat until pasta is cooked.
2 minutes before pasta is done throw in Broccoli Rabe and drain the whole lot together.
Return the Rabe and pasta to the pot and stir in the Béchamel, season with more Salt and Pepper if you wish and top with Almond Parmesan and serve.
Makes 1 super large serving or 2 smallish ones (or 1 big one with some nummy leftovers for lunch!)
Lastly, totally off topic but I have a think about kitty paws. Just love them. And when I see this:

That looks really yummy! I've tried broccoli rabe one time, when it was reduced to clear at woolies. There are a few recipes in Vegan Planet, I think we made "Brown rice with Chickpeas and broccoli rabe" and it was really nice!

Celine, I don't think I'd want to eat her feet either. They have a funny smell, kind of musty! I do want to cuddle them though!
Theresa I went back today to get more (thinking of a billion things I could do with Broccoli Rabe) and nothing! I asked about it and he told me it's a sometimes product. If it comes in it comes in ::rolls eyes:: If I ever find it again though I'll give that chickpea recipe a try! Sounds good.

What's the broccoli rabe look like when it's fresh? This looks easier than mac 'n cheeze!!!

Yep, it is easier, it's not as cheesy but if you wanted to you could really up the amount of nut. yeast in it and it would cheese it up. Broccoli Rabe can also be sold as Rapinni (sp?) and looks like this: http://www.gourmetsleuth.com/images/broccolirabe_bcb375.jpg
Sadly I cannot find it again :( I've been to every Woolies this side of Canberra and it's gone, all gone ::sob:: I hate those one off's that get you excited and then disappear!
