Birthday Brownies, PB Carob Pudding and Flowers.
Yesterday I had the honour of babysitting this beautiful girl. She is seriously the sweetest, most lovely doggie you could ever meet and my whole family are in love with her! Anyway first up I just had to share her woeful stare :D
Today was my birthday (sigh, another year older). I decided to make something I hadn't made before. I've conquered cupcakes and killed cakes so I decided to try my hand at baking brownies (could I get any cornier!?!!?). Because it was for my birthday I didn't worry about nutritional content whatsoever so as much as I want to try those black bean brownies that have been doing the rounds I put them aside for next time and made these totally junk food best ever vegan brownies after finding a link to them on Veganista's blog (my hips won't thank you for that link Veganista!)
Anyway, I followed ALL the links until I got to here and then I pretty much kept to the destructions except I ran out of Maple Syrup so added about 2 Tbsp Agave Nectar to make up the difference and I also used half Oil half Applesauce (okay, so there was a little bit of healthifying!). Oh and I also used my Hazelnut Milk instead of Rice.
Then I wasted time making marzipan roses just because I could :P
I'm not a big fan of nuts in baking but if you like them add away!
Best Ever Vegan Chocolate Brownies
1/2 cup Canola oil (or 1/4 cup plus 1/4 cup unsweetened applesauce)
1/2 cup Maple Syrup
1/4 cup Hazelnut, Rice, Soy or other non dairy Milk
1 1/2 tsp Vanilla
1 cup unbleached White Flour
1/2 cup Cocoa Powder
6 Tbsp Sugar
1/4 cup Sucanat (I used Molasses Sugar)
1 tsp Baking Powder
1/2 tsp Salt
1/2 cup semi/sweet Chocolate Chips
Preheat oven to 176C. Lightly oil an 8 inch square pan.
Put the oil, maple syrup, milk and vanilla in a medium bowl and whisk to combine.
In a separate bowl sift together the flour, cocoa, sugar, sucanat , baking powder and salt.
Fold the dry ingredients into the wet mixture with a rubber spatula. Don’t overmix.
Fold in the chocolate chips.
Put the batter in the pan and spread it out evenly. Bake for 35 minutes (mine only took 25).
Do not over bake.
Cool before cutting.
Next time I might add the teensiest bit more liquid.
I also made the pudding from my last post with carob instead of cocoa powder for Veggiegirl. It was yummy but you can taste the tahini more with carob so you might need to add a bit of extra powder...or do what I did and add a tsp of peanut butter to the mix. Mmmmmmm PB carob pudding!

Dinner, we got take away from a local Italian Restaurant. I didn't bother with photo's. We got home and discovered they'd forgotten hubby's salad and put in the pine nuts I'd asked them to leave out of my dinner. His was also overcooked :( Never mind, next birthday I'll cook! (lol).

The flowers from Mr UnVeg are beautiful; and how nice that he got you ice cream for the brownies!! the perfect accompaniment :0)
sorry that your dinner out wasn't that good, but hey, with those sensational brownies and the ice cream accompaniment, it sounds like you had a great meal anyways!!

Thanks Veganista! And thanks for the recipe. I cooked it this morning but used a dish that was too thick so busy tweaking it tonight. It smells amazing though! I'll let you know later how it goes! (I really need to stop using ! all the time!)

Gorgeous dog. I'm in love with that photo, so I don't know how you managed to let her leave if you were just dog-sitting for one day!

Theresa, she's so beautiful, but she misses her "Dad" SO much that it's nice to see her go home too cause she just looks SO happy to see him when he comes to get her.
Tee hee, yup, the roses are familiar. I'm not arty at all so when I learn something I reuse and recycle :P
