Chocolate Peanut Butter Ice Cream.

OH MY GOD! You HAVE, HAVE, HAVE to make this NOW! (no! You have to make it yesterday!!!!!!!!!!). A while back I asked Celine from Have Cake Will Travel to make some Peanut Butter soy free ice cream for me (so I could snaffle the recipe up of course!) and amazingly (well not so much amazingly for her because we all know how ambitious and wonderful she is in the kitchen) she got right to it that afternoon!
Then I caught the flu and got sick and never got to actually try this delicious creation but I am feeling somewhat better and decided to finally give my $4 new ice cream maker a whirl.
This is all her recipe aside from 2 changes (one because I wanted choc pb and one because I bought coconut cream instead of milk-whoops! Never ever shop with kids in tow!). It looks a little icy in the photo and in real life but I think it was the Peanut Butter I used because it is super super creamy and anything but icy! Go away and make this right now!
1 cup crunchy salted natural Peanut Butter (I used smooth and mine was anything but natural)
2 tsp Vanilla Extract
1 cup plain Rice Milk
1 1/3 cups full fat unsweetened Coconut Milk (or Coconut Cream if you shop with kids :P and don't shake the can, get as much of the cream as you can!)
3/4 cup white Sugar or Light Brown Sugar (packed)
If you're making my chockie version add 2 1/2 desertspoons (the kind you eat with not the measuring one's) of unsweetened cocoa powder (buy a good one!)
Mix all the above in your food processor or blender and chill in fridge for 4 hours or over night (I did 5 hours and when I got it out it was plenty cold enough and almost like mousse!).
Once cold throw it all into your pre chilled icecream maker, switch on and let it do it's thing (mine only took about 15 minutes tops.)
Eat away until you feel deliciously and violently ill (in the best way possible to feel ill of course!)

Oh I KNOW! I keep disappearing into the freezer with a spoon! My poor waistline is going to pay big time!!!
