Linguine with Lemon, Garlic and Parsley.
This is another one I borrowed from the BBC Good Food Website. I cheated a little with how it was made and to be honest, we've had something pretty much the same, before a number of times. But it was yummy anyway, which is why we've had it a number of times before I guess :P I used to make the other one with bow tie pasta though and this one I made with fresh linguine.
Linguine with Lemon, Garlic and Parsley:
Serves 2
200g Linguine
50g Parmesan, finely grated
1 Lemon, zested and juiced
1 Garlic Clove, crushed
4 Tbsp Olive Oil
A small bunch fresh Flat Leaf Parsley (Continental Parsley), leaves removed from big stems
Cook the linguine according to packet directions. Throw parsley into a food processor and pulse until roughly chopped. Throw in parmesan and pulse once or twice more until combined. Remove to a medium sized bowl and add lemon zest, lemon juice and olive oil. Stir to mix.
Once linguine is done, drain well and toss with the sauce. Serve with extra grated parmesan if you like (I didn't, I don't think it needs more).
